Spicy Pork Fried Rice + Baked Beans
I haven’t had fried rice for a log time and since I had the marinaded pork leftover from the other day after I cooked Pork Basil. The marinaded pork is probably about half a package that I bought from Target. It’s best to have some vegetables, but we were out of pretty much everything so I thought I can still use onions! As my grandma always said when I was a little girl, never had just rice and meat! You must add some vegetables, if you couldn’t find any, throw in some onions because
she believed that onions prevented you from having a cold. It’s a Thai believe…
Anyway, back to the cooking! If you are well prepped, you must have the marinated pork and cooked rice ( I preferred Jasmine rice because it’s soft!) ready. Mince up 4-5 cloves of garlic and slice some onions.
First, fry the garlic till it’s golden brown then add onions and stir fry for a few minutes then add the pork and cook it till it doesn’t look pink anymore and it should look a little brown. Add some cooked rice and mix everything together and last, add 2 eggs ( I didn’t whip them, just break them and cook in the pan with everything else. Add soy sauce and oyster sauce. I added some Thai Siracha chili sauce to make it a little spicy. Use a little brown sugar. Taste it to see if that’s the taste you like. I always heat up a can of baked beans for a side dish. Baked bean and spicy fried rice’s tastes really complimented each other! This time my dish doesn’t look great, but I could promise you the taste! We inhaled it in minutes 😀
P.S. I will update this post later. I have been working on my first children’s book at the same time, but wanted to update this dish as well!
