20130309-005100.jpgI have created some new menus for my husband and myself this week. One of them was ” Kra-Prao-Khai-Pad-Ham” or in my own words in English, I call it “Ham & Eggs Basil” It may sound unusual for Americans, but I’m Thai and we pretty much eat a lot of things with rice. I have made chicken basil and pork balls basil for my husband and he loved them both, but we both got sick of it. Well, I don’t know if he did, but I definitely did!

Why did I choose ham? Because we haven’t gone food shopping! We have plenty of eggs and some basil left over from what I cooked last time. Also, I don’t want this dish to be all greasy, so I thought I’ll add some onions along with red chili peppers! Say good bye to your mundane chicken basil!

Ingredients ( 2 servings )

• 6 slides of hams
• 4 eggs
• 1/4 of 1 bunch of basil (can add more but not too much because it will change the taste of this meal)
• 2 red chili peppers
• 1/2 of big onion
• 1/2 cup of chicken broth
• 5 cloves of garlic
• soy sauce, oyster sauce, brown sugar
• vegetable oil / or olive oil ( I use olive oil, but not recommend if you have digestive problems!)

Cook the eggs first Crack those 4 eggs and whisk them. Get the pan out and heat up the stove with high heat. Use vegetable oil, enough to coat the pan and to make the eggs crispy. Pour the whisked eggs in once the pan gets really hot. Fry it till it look crispy gold on both sides. My trick is to use high heat to make it crispy but then lower the heat so you don’t burn the eggs. Once it’s done, lay some paper towel on the plate and lay the crispy fried eggs on it. Leave it for now.

Cook Ham & Eggs Basil

It’s ok to use the same pan unless you burned the egg then you may need to get another pan out. I didn’t so I used the same pan. First off,chop 5 cloves of garlic, 1/2 of onion and 2 chili peppers. Use medium high flame and add a little vegetable oil then fry garlic till it’s golden brown. Add onion and lower the heat a little. Add the chili peppers, then some minced ham. Add some oyster sauce (about 2 tbsp, but really, I don’t really measure because I keep tasting while cooking). Then add a little soy sauce. Quick note : if you add a lot of oyster sauce, then try not to use soy sauce as much because it will be too salty and it’s hard to correct the taste. Sugar will come in handy to balance the taste but you don’t want to use too much sugar either. Once the ham is cooked, add the fried eggs in and try to break into small pieces in the pan while mixing it together. Lastly, add basil leaves in and cook a couple minutes. All together takes less than 45 minutes to cook with preparation beforehand. Serve it with cooked Jasmine rice!
