Baked Chicken & Sticky Rice
I’m ending my long weekend with making some good home cooked meals. I haven’t had sticky rice for awhile so today is the day. Since tonight is Dexter night, I didn’t want my cooking to get in the way of that, so I went food shopping and the menu for today is baked chicken with sticky rice and some salad. I don’t recommend anyone to bake anything in this crazy heat, though! To make sticky rice, I would recommend to soak the rice in a bowl with water just enough to cover the rice, the longer the better. I remember seeing my grandma leaving the rice all night, but I don’t do that. To me, a couple of hours is good enough. Place the rice ( drain the water ) in a flannel like basket which I bought from a Thai supermarket in Queens. The basket should be on a vase-shape pot with boil water in it. It doesn’t take long to make sticky rice, but being attentive is a must. It usually takes around 25-30 minutes till it’s cooked and gets really soft. If it feels hard, sprinkle some water and wait a couple minutes. To check if it’s done, use a spoon ( wooden spoon preferred) to spread the rice so it cooks evenly. While waiting for the sticky rice, Marinade the chicken first so it has full flavors! I use a lot of stuff ; salt, pepper, garlic powder, soy sauce and oyster sauce. Lay marinaded chicken on a sheet of onions. Bake in 350 degree preheated oven. Allow 30-35 minutes to cook.
